If you live in the United States, you must have surely heard of Cinco de Mayo. When we first moved here, I had no idea what it was until a friend hosted a wonderful Cinco de Mayo party. It literally translates into 5th of May and (according to Wikipedia) is a celebration of victory of Mexican army over the French on May 5th, 1862. The way it is celebrated in the states is a day to enjoy drinking and eating everything that is Mexican. And that itself is a great celebration! I am sharing some of my recipes for Cinco de Mayo as well as few of my favorites from around the web.

Drinks
First things first - I love Margaritas and I have to start from this queen of cocktails (for me atleast). though Dr. A makes the best margaritas in the whole wide world (not a biased opinion), I still have to work on that post someday. For now, this recipe of Skinny Margarita by Gaby is pretty much up there with Dr. A's.
If cocktails are not your thing, you can make the above margarita virgin or try this Watermelon Mint Spritzer.
Appetizers
Tons and tons of appetizers and snacks. Have to have guacamole!
Next in line after guacamole is fresh salsa or salsa fresca or pico de gallo - whatever you call it. What's in a name anyways?

You need to fill up on some healthy veggie goodness, right? These salads got you covered.

Avocado dressing tastes good even on shoelaces so keep it handy for you Cinco shenanigans.
Main Course
Of course you are still not full. Everyone needs some substantial, prime channel, Mexican food other than the yumminess above. Slow cooker or crockpot meals are a great option when you are planning a big party. No need to cook all day, just put somethings in the crockpot and have the dish ready in a few hours.
Slow Cooker Chicken Tortilla Soup is always a hit!
With chicken cooked in the crockpot, these Chicken and Bean Tostadas also come together rather easy. Just set out all the toppings and make it a DIY kind of dish.
Burrito bowls are all the rage these days and are another one of those DIY dish. These Healthy Grilled chicken bowls are great for a party.
You can go with a vegan/vegetarian option with these Crispy Tofu Buddha Bowls.
