Aaah..berry season is here! Summers bring beautiful and yummilicious berries to the grocery stores and local farmer’s markets - very pretty looking strawberries, blueberries, blackberries, raspberries and more. Though our favorite part of consuming berries is just to eat them straight or in smoothies but this blueberry cobbler recipe is pretty much on top of the list for berry dishes. These Baked Blueberry Donuts and strawberry muffins are pretty legit as well!

Ingredients
This is the simplest dessert recipe to remember. I call it the 1-1-1-1 recipe and you will see why. And the recipe also happens to be egg-less!
- Self rising flour (see recipe notes if you don’t have self-rising flour)
- Butter
- Milk
- Sugar
- Blueberries

Instructions
Get your oven preheated to 350 degrees F/ 180 degrees C. Grease your baking dish with butter and set aside. Melt 1 stick of butter in the microwave in a deep mixing bowl. To the same bowl, add the self rising flour, sugar, and milk. Whisk everything together till completely mixed and smooth. Pour the mixed cobbler batter into your greased baking dish and sprinkle with blueberries – as many as you like. Sprinkle the coarse sugar on top and place it in the preheated oven. Bake until golden brown. That's it!

Hint: Be careful while you melt butter in the microwave. Sometimes the butter “bursts” in the microwave and the clean up is not pretty. I would suggest start with 30 seconds and then go on in 10 second increments till the butter is melted.
Substitutions
This easy cobbler is very versatile – switch up blueberries for your favorite berries – blackberries or raspberries. Strawberries have a little bit different texture profile so I won’t use the exact same recipe for strawberry cobbler, but feel free to switch up with other berries of your liking. Serving Suggestion

Absolutely! I usually have the cobbler ingredients mixed and ready to before dinner or before the guests arrive and then stick in the oven during dinner. By dessert time, warm Blueberry Cobbler is ready!
Store any leftovers in the refrigerator. I recommend heating a slice in a toaster oven.

Easy Blueberry Cobbler
Ingredients
- 1 cup Self Rising flour See note
- 1 cup Milk Full fat/whole milk recommended
- 1 cup Sugar
- 1 stick Unsalted butter ½ cup + more for greasing the baking dish
- 1.5 cups Blueberries See notes
- Turbinado or any coarse sugar – for sprinkling on top optional (but highly recommended)
Instructions
- Preheat the oven to 350 degrees F/ 180 degrees C. Rinse the berries and set aside. Grease your baking dish with butter and set aside.
- In a deep mixing glass bowl, melt 1 stick of butter in the microwave.
- To the melted butter, add 1 cup self rising flour, 1 cup sugar, and 1 cup milk. Whisk till completely mixed and smooth.
- Pour the mixed cobbler batter into your square greased baking dish (I used 8 by 8 inch) and sprinkle with blueberries. Sprinkle the coarse sugar on top and place it in the preheated oven.
- Bake for 50-55 minutes till golden brown. Serve with a dollop of fresh whipped cream or ice-cream or just as-is.

Have made this 2 or 3 times...always comes out perfectly...I use salted butter, and reduce salt amount called for in recipe. The Turbidano sugar is essential. Don't omit it! I won't ever need another recipe, it's that good!

Hi Melissa,
I have not tried freezing this cobbler but you could try cutting it into chunky pieces, wrapping them in cling wrap/plastic wrap and then storing in freezer bags or containers. You can then thaw a piece in the refrigerator or room temp, and then toast it slightly in a toaster oven before enjoying. I would not recommend microwaving it because that might dry it out.

Turned out great ( still warm ) I used Swedish pearl sugar and actually added 1/2 cup of strawberries to 1 cup of blueberries . Dusted all berries with flour before adding onto the dough . I don’t use self rising Flour in my kitchen and followed your notes to make it . My husband loves sweets and gobbled it right up . For my European taste it was a bit sweet but I can adjust and make it in Ramekins. Giving it a 5 ! Thanks for posting - it’s simple and the crust is crisp and brown . Makes for a good presentation .
