Aloo Tikki Sliders or burgers have become a very popular street food in India ever since the popular burger chain with Mc and D in it's name opened its doors in India and introduced this fast food. These sliders are made with an Indian spiced potato and peas masala formed into slider patties and pan fried to make "tikkis". The tikkis are then tucked in slider buns with your favorite toppings and chutneys for a fun snack or appetizer.
This Aloo Tikki Slider recipe is inspired by the ones served on street carts and by an unreal number of reels that Little V and I watch on Instagram. Try them on toasty slider buns loaded with your favorite burger fixings like cabbage (more popular in Indian street food), onions, cheese, and chutneys.

Recipe Ingredients
Street food inspired recipes usually have simple, inexpensive ingredients. Just like in this Pav Bhaji recipe, these aloo tikki sliders also use humble ingredients. You can use store bought mint cilantro and tamarind chutneys but I have homemade recipes of all the chutneys. Toppings can be whatever your heart desires but I have recommended/ suggested toppings included in the ingredients.
- Potatoes: are the backbone of this recipe. Use russet or red potatoes. You will have to boil the potatoes before using them to make the aloo tikki sliders. You will need 1 pound (about ½ kg) or 3-4 medium sized potatoes.
- Buns: Brioche slider buns are my favorite to use in this recipe. Their buttery flavor goes really well with the aloo tikki patties. If you have an Indian store close by that sells pav buns, those would be great as well.
- Spices: All my favorite spices come together in this recipe. A small but mighty list of cumin, coriander, chaat masala, and garam masala.

How to make this recipe
Since this recipe uses boiled potatoes, plan ahead for that. You can use a pressure cooker or instant pot to boil whole potatoes to make this quicker. If you choose to make it in a open pot, you will need a longer time but you can peel and chop the potatoes before boiling.
Step 1: Mash the boiled potatoes and add peas, minced serrano and peas, corn flour, and spices. Mix everything together until well incorporated (Image 1).
Step 2: Take about 3 tablespoon spiced potato mixture and form it into a flat disc, just like you would for a burger patty. Repeat until you have 12 patties in total. In a heavy bottom pan, add two tablespoon of olive oil on medium high heat. You can also use my favorite cooking spray. Lay the aloo tikkis in the pan without overcrowding it(Image 2). Let the aloo tikkis cook on this side, undisturbed for about two minutes.
Step 3: Flip the aloo tikkis and let them cook on the other side until brown and crispy on both sides (another 2 minutes) (Image 3). Remove from the pan onto a paper towel lined plate. Repeat until all the tikkis have been cooked.
Step 4: Take 6 slider buns and slice them from the middle. Spread one half with cream cheese, mint cilantro chutney and tamarind chutney (Image 4).
Step 5: Add one aloo tikki to each slider bun side that has the cream cheese and chutneys on it (Image 5).
Step 6: Top the aloo tikkis with thinly sliced white onions and cabbage (Image 6).
Step 7: Top the aloo tikkis with cabbage and onions with a slices of pepperjack cheese so that the topping are completely covered with cheese slice (Image 7).
Step 8: Put the slider bun tops on the slider side with the aloo tikkis, toppings and cheese. Brush the tops with butter and sprinkle with chaat masala. Carefully place the slider buns "block" on a foil or parchment lined cookie sheet to toast (Image 8).
💡Vaishali's Tip!
Forming the Aloo Tikkis: You may find it easier to form the potato mixture patties if your hands are wet.
Substitutions and Additions
- Cabbage - instead of cabbage you can shred your favorite lettuce and use instead of cabbage. You can even use baby spinach for added nutrition.
- Slider Buns - use gluten free buns instead of brioche buns to make this gluten free.
- High Protein - the aloo tikki can be replaced with this bean burger patty to make this recipe high protein.
- Corn Flour - You can use rice flour in place of corn flour for the aloo tikkis. Rice flour will make crispier tikkis.

Variations
- Spicy - adjust the spice level in the potato mixture by adding chopped thai chilis instead of serrano. You can also add red chili pepper or pepper flakes to taste to the mixture. Replace the cream cheese with jalapeno cream cheese to add another level of spice and flavor
- Deluxe - add mayo and crispy fried onions or grated paneer!
- Kid friendly - skip the serrano in the potato mixture and replace pepper jack cheese with provolone slices

Storage, freezing, and reheating instructions
- Storage: You can make the potato mixture ahead of time and store it in an air tight container in the refrigerator for up to 2 days. You can also store the aloo tikki sliders individually wrapped in foil or in a single layer in wide air tight container in the refrigerator for 5-6 days.
- Freezing: Form the aloo tikkis and flash freeze the uncooked tikkis on a parchment lined cookie sheet for 1 hour. Then take the frozen tikkis and store them in freezer bags for up to 3 months. You can also freeze the cooked tikkis in the same way. Let the cooked tikkis cool/come to room temperature before freezing.
- Reheating: reheat the leftover aloo tikki sliders by toasting them in a toaster oven or heating in medium hot skillet.
FAQ
Addition of corn flour prevents the aloo tikki from breaking. You can adjust the amount of corn flour until your aloo tikkis don't break anymore.
3 sliders per person would be a "meal" serving size but when serving this as an appetizer or snack, you can serve 2 per person.
Given the portion control you can achieve by making the burgers smaller to be termed as a "slider", the sliders can be considered healthier than burgers!

Aloo Tikki Sliders Recipe

For the Aloo Tikkis
- 2 cups boiled potatoes that have been mashed See notes
- 1 cup frozen green peas Thawed
- 1 serrano pepper minced
- 5-6 sprigs cilantro stems removed and chopped
- 2 teaspoon salt adjust according to taste
- ½ tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon chaat masala
- 2 tablespoon corn flour
- Olive oil to shallow fry the aloo tikkis
To assemble the aloo tikki sliders
- 12 brioche slider buns see notes
- 2 tablespoon cream cheese spread
- 4 tbsp mint cilantro chutney homemade or store bought plus more for serving, see notes
- 4 tbsp tamarind chutney homemade or store bought plus more for serving, see notes
- ¼ head cabbage sliced thin
- ½ white onion sliced thin
- 5 slices pepper jack cheese
- 2 tablespoon butter melted
- chaat masala for sprinkling
- 2-3 sprigs chopped cilantro for garnish
Instructions
Making Aloo Tikkis
- In a deep mixing bowl, add all the ingredients under aloo tikki (except oil) and mix well. Check the potato mixture for seasoning and adjust spices and salt to your taste if needed.
- Take about 3 tablespoon of the potato mixture and form into patties of the same size as your slider bun. Lay the patty on a greased cookie sheet. Repeat until all the potato mixture has been used up. You should get at least 12 patties from this mixture.
- Set a heavy bottomed non stick pan on medium high heat and add the about 1 tablespoon olive oil to it.
- Once the oil is hot, add the patties/tikkis to the pan without crowding the pan. You should be able to cook 5-6 patties at a time in a 12 inch skillet.
- Let the patties cook 3-4 minutes without moving. Then flip and cook for 2-3 more minutes on the other side. Remove to a paper towel lined plate. Your aloo tikkis are ready.
To assemble the sliders
- Slice a block of 6 sliders from the middle so that you have a top and a bottom layer of 6 sliders each.
- To the bottom layer of the buns apply cream cheese, mint cilantro chutney, and tamarind chutney evenly. Place six aloo tikkis on top (1 for each slider bun, see pictures).
- Top the tikkis with cabbage and sliced onions followed by pepper jack cheese. Add the bun tops block.
- Brush the bun tops with meted butter and sprinkle some chaat masala. Repeat with the remaining 6 slider buns.
- Lay the assembled sliders on a foil lined cookie sheet and toast in a toaster oven until nicely toasted and the cheese has melted. Yo can also grill them in a griddle or a panini press.
- Garnish with chopped cilantro and serve with mint cilantro and tamarind chutneys!
