💭About Kala Chana Curry
This kala chana curry is a Saturday staple in many Punjabi houses back home. Just like Rajma Chawal or Kadhi chawal is a Sunday thing, this black chickpea or bengal gram curry is reserved for Saturdays. The reason is the belief to cook something black for Shani Dev (Plane Saturn). I'm not sure what the reason behind is that grew up kala chana with chawal for as long as I remember.
In Hindi, Kala means black and chana means chickpeas so this dish literally translates word to word though the chickpeas are more dark brown than black in color but definitely darker than the pale regular chickpeas or garbanzos. They are also smaller and nuttier and have a firm texture after cooking. I promise once you try this proper Punjabi kala chana curry, you will make it over and over again.
I am sharing full instructions for both the Instant Pot and the stovetop pressure cooker because I know many of you still use a traditional Indian pressure cooker and both methods produce absolutely delicious results. Serve it with my Cumin Basmati Rice or Whole Wheat Roti for a classic Punjabi meal with a side of homemade yogurt and Dr. A's pickled red onions. Classic!!
🫘 Why Soaking the Chana Matters
Every kala chana recipe you will find recommends soaking the chickpeas before cooking and there is a very good reason for that. Most dried beans have a thick outer skin which makes them much harder and slower to cook. A 6-hour soak does several important things that make a real difference in your finished curry:
- ⏱️Dramatically shortens cooking time: Without soaking, kala chana can take 60–75 minutes under pressure to cook tender. After a 6-hour soak, that drops to 25–30 minutes in the Instant Pot or pressure cooker, a significant time saving.
- 🫘Softens the tough outer skin: The skin absorbs water and softens during the soak, allowing heat to penetrate more evenly during pressure cooking. This gives you chickpeas that are tender all the way through, not soft on the outside and hard in the center.
- 💚Improves digestibility: Soaking reduces the the compounds responsible for gas, bloating, and reduced mineral absorption. Vaishali's Pro Tip 💡 - Always discard the soaking water and rinse before cooking to wash these away.
- 🌿Forgot to soak? If you are in a hurry, do a quick hot-soak: add the rinsed kala chana to the Instant Pot with 6 cups of water, set to Sauté mode until the water boils (about 5 minutes), then turn off and let sit for 1 hour. Drain, rinse, and proceed with the recipe. Increase the pressure cooking time to 35–40 minutes. The texture will not be quite as perfect as an overnight soak, but it works!
✨ Why This Recipe Works
- 🥘Both methods covered: Full instructions for the Instant Pot AND stovetop pressure cooker whichever you have, this recipe works. The masala base and timing is identical; only the cooking vessel differs.
- 🍅Properly bhoono-ed masala: The onion-tomato masala is cooked until the oil separates (just like my Easy weeknight Punjabi chicken curry and also easy matar paneer) — this step is what gives Punjabi kala chana its characteristic deep, restaurant-worthy flavor. Do not rush it.
- 🌿Completely vegan and gluten-free: Kala chana curry is naturally both without any substitutions needed. It is high in plant-based protein and fiber and 100% wholesome.
- ❄️Better the next day: Like most legume curries, kala chana tastes significantly better after the flavors have had overnight to deepen. It is an ideal meal-prep dish, so make a big batch and eat it all week and also freezes beautifully.
📋Recipe Ingredients
I will be honest, a great Indian curry does need its spices! But here is the good news: every spice in this kala chana recipe is one I keep in my pantry all the time, and I am pretty sure most of you do too. Cumin, coriander, turmeric, garam masala, so nothing unusual, nothing hard to find, just the everyday signature Indian spices.

- Kala Chana: Dry kala chana, also known as Bengal gram or black chickpeas are easily available in most Indian and Asian grocery stores. These can also be found in international foods aisle of larger supermarkets. Amazon also has organic kala chana available. The chickpeas need to be soaked 6 hours or overnight in plenty of water, then drained and rinsed before using in the curry.
- For the masala:
- Oil - I have used avocado oil but any neutral oil will work. If you do not care about this recipe being vegan, ghee works great too.
- Aromatics - The standard casting - red onion, ginger, garlic, green chili (optional), and tomatoes. You can totally use white onion for a sweeter and milder flavor. For tomatoes, I prefer to use plump, on the vine tomatoes.
- Spices:
- Cumin seeds
- Turmeric
- Red chili powder - adjust to your heat preference. I use cayenne powder which is pretty mild. you can also omit it completely.
- Coriander powder - this gives the curry thickness and an earthy flavor. Non- negotiable.
- Finishing the curry:
- Garam masala - I use my homemade garam masala which is a super simple recipe but it also easily available in most stores. You can also buy garam masala online.
- Cilantro - you will need a handful of chopped cilantro for garnish. Optional, of course!

📖Substitutions, Additions and Variations
- Ghee - instead of avocado oil or olive oil, you can use ghee, but the recipe would not be vegan anymore
- Spice level - use a mild green chili like jalapeno in the masala and cayenne powder in the spices. Or completely skip it. Or just use black pepper. You can also use thai chili pepper in the masala and hot red chili powder in the spices to make the curry more spicy.
- Tomatoes - use plump, juicy tomatoes like on the vine tomatoes. If using roma tomatoes - use at least 3. If canned tomatoes are your thing, you can use 1 can of diced tomatoes, though I highly recommend using fresh tomatoes.
- Onion - you need about half a cup of onion. Too much onion can ruin the curry flavor so you cna also use white or yellow onion instead red to be safe.
👩🍳Making the Instant Pot Kala Chana Curry
Note: These steps cover the Instant Pot method for the kala chana recipe. I have used a 6 qt Instant Pot. See the stovetop pressure cooker section below for those instructions.
Preparation: Plan ahead and soak the kala chana for 6 hours or overnight,
Step 1: Blend the masala base - blend the cut onion, tomatoes, peeled garlic, ginger and green chili together in a blender until smooth. You should have 2 cups of blended paste.
Step 2: Set the instant pot to saute mode (medium) and add the oil. Once the oil is hot, add the cumin seeds and wait until they splutter (about 30 seconds).


Step 3: Add the blended paste along with all the spice powders, except garam masala.
Step 4: Switch the saute mode to high and cook the masala for about 10 minutes, stirring in between until the moisture evaporates and you can see tiny droplets of oil around the masala.


Step 5: Drain and rinse the soaked black chickpeas and add the instant pot along with 4 cups of water and salt to taste.
Step 6: Cancel the saute mode and turn the instant pot on pressure cook mode and put the lid on with the valve set to sealing mode.


Step 7: Set the pressure cooking time to 30 minutes.
Step 8: After the 30 minutes are up, let the pressure release naturally (will take about 15-20 minutes). Open the lid and using a potato masher, mash some of the chickpeas into the curry to thicken it. Adjust salt if needed and finish with garam masala and chopped cilantro. Your kala chana recipe is ready - enjoy with some cumin rice or whole wheat roti.


🍲Stovetop Pressure Cooker Method
If you grew up watching and cooking Indian food in a traditional pressure cooker, you will find the stovetop method of kala chana recipe produces a flavor and texture that you are more familiar with and closer to what you would find at a roadside dhaba in Punjab. The Instant Pot method is more hands-off and consistent. Both are delicious, use what you are comfortable with. Here are the steps:
- Add the oil to the pressure cooker set on medium-high flame, followed by the cumin seeds. Once the cumin seeds are spluttering, add the blended paste along with turmeric, cayenne, and coriander powders. Cook for 8-10 minutes, stirring in between or until the moisture evaporates and you can see tiny droplets of oil aound the masala.
- Add the drained and rinsed chickpeas along with 4 cups water and salt. Lock the lid in place and turn the heat to high.
- Once the cooker whistles, turn the heat to low and cook for 30 minutes (set a timer). After 30 minutes, turn the heat off and let the pressure relase naturally (it will take about 15 minutes).
- Open the lid, check the chickpeas for tenderness, mash, add garam masala + finish with cilantro.
🫙Storage, freezing, and reheating instructions
Kala chana curry is one of those dishes that tastes even better the next day as the chane absorb even more of that rich masala flavor, which makes it absolutely perfect for meal prep! Here is everything you need to know to store it well:
- Refrigerator: Store leftover kala chana curry in an airtight container in the fridge for up to 5 days. The gravy will thicken as it sits so just add a splash of water when reheating and it comes right back together.
- Freezer: This curry freezes beautifully! Let it cool completely, transfer to a freezer-safe airtight container or zip-lock bag, and freeze for up to 3 months. I love making a big double batch specifically to freeze, it is the best kind of shortcut on a busy weeknight!
- Reheating on the stovetop: Add the curry to a saucepan with a splash of water and reheat on medium-low heat for 4–5 minutes, stirring occasionally, until heated through. This is my preferred method.
- Reheating in the microwave: Transfer to a microwave-safe bowl, add a small splash of water, cover loosely, and microwave for 1–2 minutes. Stir halfway through and heat for another 30 seconds if needed.
- A note on thawing: Move frozen kala chana curry from the freezer to the fridge the night before you plan to eat it and let it thaw overnight. Then reheat as above.

💭 What Else Can I Make With These Ingredients?
- Kala chana: Leftover cooked black chickpeas make an incredible kala chana chaat, just toss with chopped onion, tomato, chutneys, and chaat masala for a vibrant street food snack. If you just boil the chickpeas with salt and do not add the masala, you can make sookhe kale chane or kala chana pulao with them.
- Onion-tomato masala: The same masala base is the heart of my Punjabi Rajma, Dal Makhani, and Matar Paneer.
- Garam masala: Use the same blend in my Instant Pot Butter Chicken, Palak Paneer, and Aloo Gobi.
- Fresh ginger and garlic: Make a big batch of Homemade Ginger Garlic Paste — it keeps in the fridge for weeks and cuts the prep time on every Indian recipe in half.
❓FAQs
Dry Kala chana have a thick and tough outer skin. Soaking for 6 hours softens that skin, dramatically shortens the pressure cooking time (from 60+ minutes to 25–30), improves digestibility, and increases nutrient absorption. Always discard the soaking water, that is where the compounds that cause bloating end up.
Kala chana (black chickpeas or desi chana) are smaller, darker, and have a thicker, rougher outer skin than regular white chickpeas (kabuli chana). They have a nuttier flavor and hold their shape better after cooking. They are also higher in fiber and have a lower glycemic index. Do not substitute one for the other in this recipe since the cooking times and flavor profiles are genuinely different.
Both produce excellent kala chana curry. The Instant Pot is more hands-off and consistent because you can set it and walk away. The stovetop pressure cooker needs just a little bit more baby sitting and gives you more control over texture and produces a more traditional dhaba-style result. For beginners, the Instant Pot is easier. For experienced Indian home cooks comfortable with a stovetop pressure cooker, that method will feel more natural. I have included full instructions for both above.
Kala chana curry pairs beautifully with Whole Wheat Roti, Garlic Naan, or paratha for a traditional Punjabi meal. It is equally delicious served over Cumin Basmati Rice for a complete dinner bowl. Add a simple bowl of dahi or yogurt and pickled red onions with lemon juice to round out the meal.

- 2 cups dried kala chana black chickpeas
- Water to soak and cook
For masala
- 1 tablespoon avocado oil
- 1 teaspoon cumin seeds
- ½ onion peeled and roughly chopped, about ½ cup, see notes
- 2 tomatoes on the vine, see notes
- 4 cloves garlic peeled
- 1 inch piece of ginger
- 2 green chilis optional or adjusted according to spice level
- ½ teaspoon turmeric powder
- ½ teaspoon red chili or cayenne powder see notes
- 2 teaspoon coriander powder
- Salt to taste
To finish
- ½ teaspoon garam masala
- 7-8 sprigs cilantro chopped
To serve
- Rice
- Roti
- Yogurt
- Pickled onions
Instructions
Preparation
- Soak the 2 cups dried kala chana/black chickpeas for at least six hours or overnight in plenty of Water.
Cooking the kala chana (Instant Pot instructions)
- Blend the masala base - blend the cut ½ onion, 2 tomatoes, 4 cloves garlic peeled, 1 inch piece of ginger and 2 green chilis together in a blender until smooth. You should have 2 cups of blended paste.
- Set the instant pot to saute mode (medium) and add the 1 tablespoon avocado oil Once the oil is hot, add the 1 teaspoon cumin seeds and wait until they splutter (about 30 seconds).
- Add the blended paste along with all the spice powders except garam masala - ½ teaspoon turmeric powder, ½ teaspoon red chili or cayenne powder, and 2 teaspoon coriander powder
- Switch the saute mode to high and cook the masala for about 10 minutes, stirring in between until the moisture evaporates and you can see tiny droplets of oil around the masala.
- Drain and rinse the soaked black chickpeas and add the instant pot along with 4 cups of water and Salt to taste.
- Cancel the saute mode and turn the instant pot on pressure cook mode and put the lid on with the valve set to sealing mode.
- Set the pressure cooking time to 30 minutes.
- After the 30 minutes are up, let the pressure release naturally (will take about 15-20 minutes). Open the lid and using a potato masher, mash some of the chickpeas into the curry to thicken it. Adjust salt if needed.
Finishing the curry
- Finish your kala chana with ½ teaspoon garam masala and chopped 7-8 sprigs cilantro
Serving
- Your kala chana is ready. Serve it with Rice, or Roti and a side of Yogurt and Pickled onions. Enjoy!
