    Easy Blueberry Cobbler Recipe

    Aaah..berry season is here! Summers bring beautiful and yummilicious berries to the grocery stores and local farmer’s markets - very pretty looking strawberries, blueberries, blackberries, raspberries and more. Though our favorite part of consuming berries is just to eat them straight or in smoothies but this blueberry cobbler recipe is pretty much on top of the list for berry dishes. These Baked Blueberry Donuts and strawberry muffins are pretty legit as well!

    Ingredients

    This is the simplest dessert recipe to remember. I call it the 1-1-1-1 recipe and you will see why. And the recipe also happens to be egg-less!

    • Self rising flour (see recipe notes if you don’t have self-rising flour)
    • Butter
    • Milk
    • Sugar
    • Blueberries

    Instructions

    Get your oven preheated to 350 degrees F/ 180 degrees C. Grease your baking dish with butter and set aside. Melt 1 stick of butter in the microwave in a deep mixing bowl. To the same bowl, add the self rising flour, sugar, and milk. Whisk everything together till completely mixed and smooth. Pour the mixed cobbler batter into your greased baking dish and sprinkle with blueberries – as many as you like. Sprinkle the coarse sugar on top and place it in the preheated oven. Bake until golden brown. That's it!

    Hint: Be careful while you melt butter in the microwave. Sometimes the butter “bursts” in the microwave and the clean up is not pretty. I would suggest start with 30 seconds and then go on in 10 second increments till the butter is melted.

    Substitutions

    This easy cobbler is very versatile – switch up blueberries for your favorite berries – blackberries or raspberries. Strawberries have a little bit different texture profile so I won’t use the exact same recipe for strawberry cobbler, but feel free to switch up with other berries of your liking.     Serving Suggestion

    Serve up the cobbler warm with some vanilla bean ice cream or fresh whipped cream, and get ready to be transported to a world of luscious, sweet, fruity goodness. Another one of our favorite fruity recipes served similarly is the Apple Crisp with Oatmeal Topping. Yumm!

    What is cobbler topping made of?

    Generally speaking, flour, sugar and butter are the key ingredients of a topping. In this Blueberry Cobbler Recipe we make more of a cobbler "batter" with milk added and it works great!

    Can I mix all the ingredients ahead of time and bake later?

    Absolutely! I usually have the cobbler ingredients mixed and ready to before dinner or before the guests arrive and then stick in the oven during dinner. By dessert time, warm Blueberry Cobbler is ready!

    How to store cobbler leftovers and reheat?

    Store any leftovers in the refrigerator. I recommend heating a slice in a toaster oven.

    Ingredients
      

    • 1 cup Self Rising flour See note
    • 1 cup Milk Full fat/whole milk recommended
    • 1 cup Sugar
    • 1 stick Unsalted butter ½ cup + more for greasing the baking dish
    • 1.5 cups Blueberries See notes
    • Turbinado or any coarse sugar – for sprinkling on top optional (but highly recommended)

    Instructions
     

    • Preheat the oven to 350 degrees F/ 180 degrees C. Rinse the berries and set aside. Grease your baking dish with butter and set aside.
    • In a deep mixing glass bowl, melt 1 stick of butter in the microwave.
    • To the melted butter, add 1 cup self rising flour, 1 cup sugar, and 1 cup milk. Whisk till completely mixed and smooth.
    • Pour the mixed cobbler batter into your square greased baking dish (I used 8 by 8 inch) and sprinkle with blueberries. Sprinkle the coarse sugar on top and place it in the preheated oven.
    • Bake for 50-55 minutes till golden brown. Serve with a dollop of fresh whipped cream or ice-cream or just as-is.

    Notes

    If you don’t have self-rising flour, substitute it with 1 cup all-purpose flour mixed with 1 and a ½ teaspoon baking powder and ½ teaspoon salt.
    Feel free to use more or less blueberries according to your liking.

      Would it be possible to tell me the flour measurement in grams? The reason I ask is when I made this delicious recipe the batter was like water. I added extra flour (+6 TBL) and was able to "save it" but I measure all of my ingredients in grams and according to the brand of SR flour that I use, 1 cup is 120 grams. I am curious if perhaps your "1 cup" of flour is actually more than that.

            Hi Nichole,
            This should stay well stored in a n airtight container for (2-3) days at room temp (70-75 degrees F. I would stick it in the refrigerator if you are planning to enjoy it over any time longer than that. Then, cut a slice and slightly warm it in a toaster oven,

        Hi Patricia. I have not tried this cobbler recipe but I think it should work. I would reduce butter to may be 3/4 of a stick (3/8th cup) and add baking powder. I hope this helps. Thanks!

      I've been making this recipe for 50 years. Received it from my mother-in-law who got it from her mother...it has stood the test of time. The only thing I do differently is melt the butter in the baking pan in the warming oven. No microwaves back then!
      No need to mix with batter. Just pour the batter over the melted butter. Spoon fruit on top.

        Jon, my mother made this recipe the way you described (melting the butter in the pan before pouring other ingredients over, and I have made it this way countless times. With minor variations, it works with lots of different fruits and berries. Yum!

          I've tried this recipe 3 or 4 times now, it is the easiest and absolutely the best in taste, prep time and uses just a few ingredients so it's not expensive to make.
          I love this recipe, it has become a holiday tradition as well as a weekly treat for my small family. Thank you for sharing it's a 10 for sure.

      This is so easy to make and pop in the oven when I need a quick dessert. All of the family loves it and it only takes a few minutes to throw together and pop in the oven. I have a freezer full of blackberries that I use in this recipe and it never disappoints. Yum ! Thank you, Vaishali !

          The batter for the cobbler is not supposed to be runny - it's almost like cake batter consistency. I hope this helps.

            Yes, I've noticed other comments regarding the consistency being runny, mine was runny as well, how did yours come out like cake batter with this recipe? I put mine in the oven just now and curious to see how it turns out being so runny....I hope it's great, I will update..

            Mine was very runny, too. I used self-rising flour, coconut sugar, and whole milk in equal proportions by volume, along with the melted butter, per recipe. I saw that someone mentioned "salvaging" her runny batter by adding 6 T of additional flour. I was tempted to do that but decided just to stick it in the oven and hope for the best. I need to take this dessert to a dinner shortly after the timer goes off.

            It seems to have worked, but it would have been more comforting to know that runny batter might be ok before I had started.
