    Easy Blueberry Cobbler Recipe

    Aaah..berry season is here! Summers bring beautiful and yummilicious berries to the grocery stores and local farmer’s markets - very pretty looking strawberries, blueberries, blackberries, raspberries and more. Though our favorite part of consuming berries is just to eat them straight or in smoothies but this blueberry cobbler recipe is pretty much on top of the list for berry dishes. These Baked Blueberry Donuts and strawberry muffins are pretty legit as well!

    Ingredients

    This is the simplest dessert recipe to remember. I call it the 1-1-1-1 recipe and you will see why. And the recipe also happens to be egg-less!

    • Self rising flour (see recipe notes if you don’t have self-rising flour)
    • Butter
    • Milk
    • Sugar
    • Blueberries

    Instructions

    Get your oven preheated to 350 degrees F/ 180 degrees C. Grease your baking dish with butter and set aside. Melt 1 stick of butter in the microwave in a deep mixing bowl. To the same bowl, add the self rising flour, sugar, and milk. Whisk everything together till completely mixed and smooth. Pour the mixed cobbler batter into your greased baking dish and sprinkle with blueberries – as many as you like. Sprinkle the coarse sugar on top and place it in the preheated oven. Bake until golden brown. That's it!

    Hint: Be careful while you melt butter in the microwave. Sometimes the butter “bursts” in the microwave and the clean up is not pretty. I would suggest start with 30 seconds and then go on in 10 second increments till the butter is melted.

    Substitutions

    This easy cobbler is very versatile – switch up blueberries for your favorite berries – blackberries or raspberries. Strawberries have a little bit different texture profile so I won’t use the exact same recipe for strawberry cobbler, but feel free to switch up with other berries of your liking.     Serving Suggestion

    Serve up the cobbler warm with some vanilla bean ice cream or fresh whipped cream, and get ready to be transported to a world of luscious, sweet, fruity goodness. Another one of our favorite fruity recipes served similarly is the Apple Crisp with Oatmeal Topping. Yumm!

    What is cobbler topping made of?

    Generally speaking, flour, sugar and butter are the key ingredients of a topping. In this Blueberry Cobbler Recipe we make more of a cobbler "batter" with milk added and it works great!

    Can I mix all the ingredients ahead of time and bake later?

    Absolutely! I usually have the cobbler ingredients mixed and ready to before dinner or before the guests arrive and then stick in the oven during dinner. By dessert time, warm Blueberry Cobbler is ready!

    How to store cobbler leftovers and reheat?

    Store any leftovers in the refrigerator. I recommend heating a slice in a toaster oven.

    Ingredients
      

    • 1 cup Self Rising flour See note
    • 1 cup Milk Full fat/whole milk recommended
    • 1 cup Sugar
    • 1 stick Unsalted butter ½ cup + more for greasing the baking dish
    • 1.5 cups Blueberries See notes
    • Turbinado or any coarse sugar – for sprinkling on top optional (but highly recommended)

    Instructions
     

    • Preheat the oven to 350 degrees F/ 180 degrees C. Rinse the berries and set aside. Grease your baking dish with butter and set aside.
    • In a deep mixing glass bowl, melt 1 stick of butter in the microwave.
    • To the melted butter, add 1 cup self rising flour, 1 cup sugar, and 1 cup milk. Whisk till completely mixed and smooth.
    • Pour the mixed cobbler batter into your square greased baking dish (I used 8 by 8 inch) and sprinkle with blueberries. Sprinkle the coarse sugar on top and place it in the preheated oven.
    • Bake for 50-55 minutes till golden brown. Serve with a dollop of fresh whipped cream or ice-cream or just as-is.

    Notes

    If you don’t have self-rising flour, substitute it with 1 cup all-purpose flour mixed with 1 and a ½ teaspoon baking powder and ½ teaspoon salt.
    Feel free to use more or less blueberries according to your liking.

      We've always called this cobbler recipe "acuppah cobbler" bc everything is a cup of in measuring. Easy to remember! So good

      I poured batter in the pan and the. Blueberries on top am i supposed to put more batter on top of the blueberries because I did not see the crust after cooking just blueberries

        There is no need to put more batter on top. As the cobbler bakes, some of the batter will form a crust around the blueberries. I hope this helps!

      I haven't made a cobbler in years then for my 74th birthday my husband of 55 years said I should make one of my cobblers. Problem was I had for got how I did it. I found another recipe and when I was mixing it with the half cup of milk I thought it should be 1 cup milk but followed the recipe to a t. Then I found this one and it is the exact way I always made it. Wish I had seen it before I wasted my time and blueberries on the other one. I will not change a thing because it is just like mine.       Very good! I took some suggestions in the comments : melted butter in square glass Pan and added the mixed dried ingredients, using only half cup sugar ,1 cup milk and 1/2 teaspoon of vanilla.
      Added 2 tablespoons of granulated sugar and grated skin of one lemon to the blueberries and let it sit for a half hour . Then sprinkled the 2 cups of blueberries on the top and sprinkled 2 tablespoons of turbinado sugar
      Every one enjoyed the cobbler

      This is great and ridiculously easy. I melt the butter in the pan in the oven, dump in the premixed dry ingredients with a bit of almond extract added. Add double the amount of berries after. Chez Panisse NYT recipe is good too but much longer. Love this!

          Classic recipe! The one change I'd make is not mixing the batter in the butter. In other words, mix the flour, sugar, and milk, and then just pour that batter into the melted butter in the pan. Seriously, try it that way once and you'll never go back!! Lol Lemon zest and a touch of vanilla, too, if I'm feeling extra. 😋

      Wonderful! ....Quick!!....Easy!! Didnt have coarse sugar ao used eaqual parts of brown sugar and regular sugar for top ....worked wonderful also added a sprinkling of pecans on the top with sugar> thank you.
