- Easy Homemade Chicken Shawarma Recipe (Skillet Method)
💭What is Shawarma?
Shawarma is one of those iconic Middle Eastern street foods that needs no introduction. Traditionally, layers of heavily spiced meat are stacked on a massive vertical spit, slow-roasting as it rotates and shaving off thin, crispy ribbons of meat. On a recent trip to Turkey, we had another version of this favorite called Doner. So good!
But you don't need a commercial rotisserie to capture that smoky, spiced magic at home! The secret is the heavy cast-iron skillet method: a high-heat sear that locks in the marinade and creates caramelization no sheet pan can match, followed by a finishing roast in the oven with red onions and lemon wedges that char and sweeten alongside the chicken. Serve it tucked into warm pita with tzatziki, over a rice bowl, or sliced over a salad, it is special every single time.
🌶️ The Shawarma Spice Blend - The Secret to Authentic Shawarma Flavor at Home
- The Warm Spice Blend: The marinade is everything in chicken shawarma, and the spice blend is what makes it unmistakable. Here is what goes into this version and why each spice matters:
- Cumin - The backbone of shawarma! It's warm, earthy, and the dominant flavor in every authentic version.
- Turmeric - A golden tinge that gives the chicken its gorgeous color. An Indian spice I use in almost everything!
- Paprika - Adds color, a subtle sweetness, and that beautiful deep red hue to the finished chicken
- Cinnamon - create the signature shawarma depth. The surprise ingredient that most people cannot quite place but it adds the signature sweetness that is completely distinctive in shawarma.
- The Acids: Fresh lemon/lime juice breaks down proteins while adding bright acidity.
- The Cast Iron Sear: Searing the chicken on high heat before moving it to a 425°F/450°F oven creates those smoky, caramelized edges typical of vertical rotisserie spit shawarma.
📋Recipe Ingredients
For the Chicken & Marinade
- Chicken Breasts (or Thighs): I have used boneless, skinlees breasts here but thighs are equally recommended for high-heat skillet cooking if you are a fan of dark meat.
- Extra Virgin Olive Oil: Forms the rich, flavor-rich base of the marinade, coating every piece of chicken.
- Lime or Lemon (Juiced): for acidity that tenderizes the chicken and brightens the spice blend.
- Spices: cumin powder brings an earthy base to the shawarma seasoning, paprika adds slight sweetness and a vibrant color, turmeric Powder adds a golden hue that I love, ground Cinnamon is really the secret spice that provides authentic Middle Eastern depth and subtle aroma, garlic Powder, cayenne Pepper (optional) for kick, and salt and freshly cracked black pepper to taste.
For the Skillet & Aromatics
- Extra Virgin Olive Oil: For searing over high heat.
- Red Onion (cut into thick chunks/wedges): Caramelizes alongside the chicken in the skillet, adding natural sweetness.
- Garlic (smashed): Infuses the cooking oil with fragrant, rustic garlic flavor.
- Lime or Lemon (cut into thick wedges): Roasted right in the pan; squeezing these warm, charred juices over the finished chicken lifts all the flavors.
For Serving (Optional)
- Warm Pita Flatbreads: Ideal for making classic street-style wraps.
- Tzatziki or Garlic Tahini Sauce: For a cool, creamy finish
- Greek Salad / Fresh Veggies: Diced cucumbers, tomatoes, and pickled red onions for crisp crunch.

👩🍳Making Chicken Shawarma
- Marinate the chicken: The chicken marinade is the key to this dish. I would suggest marinating the chicken for at least an hour, but the longer, the better. Mix the marinade ingredients in a mixing bowl, add the chicken, cover and let sit in the refrigerator.
- Make the sauce and/or the salad: While the chicken is marinating, you can use my recipe to make homemade tzatziki. Prep the salad, if making it.
- Cook the chicken: Start by searing the chicken in a very hot skillet with red onions, garlic, and lime (or lemons). Then finish it in a 450-degree F oven. Let the chicken rest for 10 minutes before slicing, covered with foil.
- Serve with a salad or wrapped in a pita with a drizzle of tzatziki.

🍗How to serve chicken shawarma
One of the best things about this recipe is how versatile it is. Whether you are prepping quick weeknight lunches or setting up a build-your-own dinner platter for family, here are two classic ways to serve it:
- 🫓Classic Street-Style Shawarma Wraps: Warm your favorite pita or flatbread and stack it high with sliced chicken, crisp lettuce, diced ripe tomatoes, and red onion. You can also use the same method with a pita pocket to tuck everything inside (my personal favorite).
- The Sauce: Drizzle generously with tzatziki.
- Optional Add-Ins: While adding cheese like crumbled feta or melted mozzarella might push traditional authenticity boundaries a bit, it’s definitely delicious, so go for it! Add a dash of hot sauce, a spoonful of hummus, or pickled red onions for an extra pop of flavor.
- 🍚High-Protein Shawarma Grain Bowls & Platters: For a wholesome, plate-style meal, serve warm chicken shawarma over fluffy basmati rice, quinoa, or spiced grain blends, alongside a fresh Mediterranean salad.
- Complete the Plate: Add a generous scoop of creamy hummus (my lentil walnut hummus is a delicious pairing) or a side of garlic yogurt sauce to bring all the flavors together.
- 🥗 Over a salad: Slice the chicken and serve over a romaine salad with lemon olive oil dressing. The spiced chicken makes any salad feel like a real meal.
- 🫓 With garlic naan: My Homemade Garlic Naan Without Yeast makes an incredible substitute for pita and the garlic butter and the shawarma spices are a combination you will be making on repeat.

🫙Storage, freezing, and reheating instructions
This chicken shawarma is absolutely perfect for meal prep — it reheats beautifully and the flavors deepen even more overnight as the spices continue to develop!
- Refrigerator: Store sliced or whole chicken in an airtight container for up to 3–4 days.
- Meal prep tip: Make a double batch of the marinade and keep an extra pound of marinating chicken in the fridge for up to 24 hours — then cook fresh whenever you need it!
💭 What Else Can I Make With These Ingredients?
- 🧄 Leftover tzatziki: Use with my Easy Falafel Recipe or as a sauce for Grilled Chicken Bowls.
- 🫓 Extra pita: Toast leftover pitas and serve with my Avocado Cottage Cheese Dip or Falafel Recipe with Tzatziki for a full Middle Eastern spread.
❓FAQs
Yes, it is a nutritious, high-protein meal. Chicken breast provides approximately 49g of protein per serving with minimal saturated fat. The spices, turmeric, cumin, and paprika, all have well-documented anti-inflammatory properties. Made at home with olive oil and without the sugary sauces used in takeout versions, chicken shawarma is significantly healthier than most fast food alternatives while delivering the same bold flavors.
At minimum, marinate chicken shawarma for 1 hour which is enough time for the spices and lemon juice to begin penetrating the meat. For best results, marinate for 4 to 8 hours or overnight in the refrigerator. The longer the chicken marinates, the deeper the spice flavor and the more tender the meat. Do not marinate for more than 24 hours since the lemon juice will begin to break down the protein structure and make the chicken mushy.
Shawarma is whole marinated meat traditionally stacked on a vertical rotating spit and slow-cooked, then shaved off to serve. Kebab refers to various preparations of seasoned ground or cubed meat, typically grilled on skewers. Both are Middle Eastern street food staples, but the cooking method and texture are distinctly different.

Easy Homemade Chicken Shawarma Recipe (Skillet Method)
Ingredients
- 2 lb boneless skinless chicken breast (or thighs)
- 6 tablespoon extra virgin olive oil good quality
- ¼ teaspoon garlic powder
- 2 teaspoon cumin powder
- ¼ teaspoon ground cinnamon
- 1 teaspoon paprika
- ½ tesp turmeric powder
- ¼ teaspoon cayenne powder
- ½ lime/lemon juiced
- 1 red onion cut into chunks
- 2 cloves garlic smashed
- 1 lime/lemon cut into thick wedges
- Salt and pepper to taste
To Serve
- 8 whole wheat pocket pitas
- Tzatziki
- Greek salad
Instructions
- In a deep bowl (like this one
), whisk together 4 tablespoon olive oil, all the spice powders, salt and pepper and lime juice.
- Add the chicken and mix so the chicken pieces are coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least an hour.
- While the chicken is marinating, use this recipe to make tzatziki and prep your salad (if making).
- After the chicken has been marinating for 45 minutes, preheat your oven to 450 degrees F or 230 degrees C. Prep the onions, garlic and lime/lemon wedges.
- Set a Cast Iron or other Oven proof skillet on high heat.
- Add remaining 2 tablespoon olive oil and chopped onion, garlic and lime wedges. Add the marinated chicken. The pan should be hot so that you can hear a sizzle when the chicken touches the hot pan.
- Sear the chicken for about 2 minutes per side and then turn the heat off.
- Move the skillet to the oven and cook for 25-30 minutes. I always use Thermometer to check if the temperature at the thickest part of the chicken is 165 degrees F.
- Remove the chicken breasts from the oven and cover the skillet loosely with foil. Allow chicken to rest for about 10 minutes before slicing.
