Today I am sharing another post that I wrote for Masalamommas online magazine. I wrote a post on Navratri fasting food for this magazine here and loved it. First of all, I want to say that I am thrilled to be contributing content to Masala Mommas. I have been following their magazine for a few years now, as one of my friends (and name twin) used to be contributor there. She connected me to Anjum, who is awesome! Anjum loved the idea of these Baked Chicken Taquitos in Spinach Rotis. We were sharing some twitter messages (find me on twitter here) when this came up.
A perfect, healthy and easy to make snack on the go or a stit down dinner with all the fix ins. Our kids love it!
These chicken taquitos are just like the ones you get in the freezer section of your grocery store or in your favorite Mexican restaurant. Just way more healthier. The wraps for chicken are homemade flatbreads/roti (find plain whole wheat recipe here) made with dough in which spinach has been mixed in (recipe here). Serve these drizzled with some avocado dressing (recipe here), guacamole (recipe here) or fresh pico de gallo (recipe here).

Notes:
Make it semi homemade by using store bought whole wheat spinach tortillas.
You can also use store-bought rotisserie chicken.
