Cut your watermelon and scoop the flesh (the red part of the watermelon) into the jar of your blender. You should have 4-5 cups cut watermelon. Wash 8-10 mint leaves and add them to the blender jar as well.
Blend the watermelon and mint leaves until nice and smooth. I use the "juice" function on my Blendtec blender. Blender tip: Don't overfill. If your blender is small, do this in batches.
Pour the blended mixture through a fine-mesh wire strainer into a mixing bowl, measuring cup, or pitcher.
Add Crushed ice to a cup and fill it ΒΎ with the watermelon mint juice. Top up the drink with Sparkling or soda water.
Add a tiny pinch of Pink Himalayan Salt (trust meβit's magical). Stir gently with a long spoon to combine. Garnish with a fresh mint sprig and enjoy chilled.

π Choose watermelon wisely - Look for the yellow spot where the "veins" of the watermelon have disappeared. The ones with this yellow spot are usually sweet.
π Taste your watermelon raw first - Before blending, taste a chunk of watermelon by itself. If it's not sweet and delicious raw, it won't be good in the spritzer.
π Use crushed ice, not cubes - Crushed ice chills faster and creates a slushier texture. My refrigerator has a crushed ice function, so it's easier, but you can use an ice crusher or blender to crush cubes. Or just wrap ice cubes in a clean kitchen towel and get your aggression out on it with a rolling pin.
π Fresh > prepared - Don't buy pre-cut watermelon or pre-made watermelon juice. Fresh, whole watermelons have better flavor.
π Make it ahead, assemble fresh - The watermelon-mint juice keeps for 4-6 hours. But assemble the spritzer fresh when serving, or carbonation will go flat.
π Scale up for parties - Make a large pitcher of watermelon-mint juice (multiply recipe by 4-6) and let guests pour their own sparkling water, pink salt, and ice. People like customizing their drinks.
