April Recap – The Kitchen Docs

Whoa..where did April go? Seems like I was just whipping up this bread for St. Patrick’s day and now suddenly we are done with Easter and talking about Mother’s Day. April usually brings a beautiful transition, the days start getting longer, grass in the yard is greener and I feel like the sun and I are finally back in sync.

In April, I decided to focus on my fitness and made a goal to drink more water. With an aim of drinking a gallon of water every day, I realistically drank about 60 oz/day and even with that I was mostly parked outside the bathroom at work..lol. Got some steps in that way….ha ha! Eating fresh, healthy and nutritious food is just half the journey. The other half is moving your body, so I am focusing on that. Self care, friends!

Food

This recipe of “Meatless Meatballs” in an Indian spiced sauce aka Malai Kofta was a part of the Meatless Monday and Gardein collection for Earth Day. I am completely honored that my recipe was selected for this collection.

I conducted a poll on Instagram earlier this month about whether to post a dessert or a one-pot chicken recipe. Guess what? One-pot chicken shawarma won hands down. Have you checked it out yet? If not, find it here.…it is yummilicious!

I have written down and photographed so many recipes to share with you all and I am hopeful that it will happen soon – slowly but surely. A girl can dream and then make it a reality!

Travel

in April, we took a trip to Branson, Missouri with family of one of our closest friends. It was a fun, relaxing and rejuvenating trip that we all needed and deserved. Do you want me to do a post on our trip to Branson – what we did, what we ate and what we shopped for. Let me know in comments below..:). I also traveled to Lincoln, NE for a work related conference on water for food. It is always exciting to be around some of the finest minds in your field and learn and soak in all the knowledge at these meetings.

In other news

Dr. A got promoted with tenure in April which is a pretty big deal if you are familiar with world of academia. Ms. Little A and Mr. Little V successfully completed a youth adventure challenge which involved running a mile and 1/2 mile long challenge course. So proud of these two nuggets!
